Found an Indian curry sauce at Aldi and had to try it. Kids loved this meal and had seconds of this meal!

Freezer Meal—Spinach stuffed Chicken

Well the photo doesn’t do it justice. But this is a requested meal from family, specifically my brother in law. It really is best when done as a freezer meal as the stuffing stays in better and the flavors absorb into the chicken. Easy to make when you already have bulk chicken and putting other recipes away. 4 chicken breasts (medium to large size) 2 cups frozen chopped spinach 1-8oz package cream cheese 4 cloves garlic minced 1 cup frozen or fresh shredded mozzarella cheese Salt & Pepper Take a small microwaveable bowl and put cream cheese in it. Microwave 30 seconds to 1 minute to warm it enough to stir. Add spinach, garlic, salt and pepper. Stir until mixed well. Then stir in cheese. Take the chicken breasts and cut a slot length wise on the thicker side. Scoop mixture into pocket, close up by pressing sides together. Put into gallon ziplock bag and freeze. Chicken Parm

Simple. Easy. Kid pleasing. Budget friendly. Aldis has really good chicken strips, the good whole meat not processed stuff. They are raw so have to be baked 30 minutes or until 160 degrees in center. Bake them. Chop them. Boil pasta, drain, add tomato sauce. Top with chicken! Serve with veggie of choice.

Chicken Quesadillas

Ingredients: 2 chicken breast halves, boneless, skinless 1 tomatoes with chilis (Rotel style), diced 1/8 box or 1 ounce cream cheese 2 tsp southwest seasoning 2 cups shredded Cheddar cheese 6 flour tortillas 6 tsp sour cream 1/4 cup salsa Put chicken breasts, Southwest seasoning, rotel tomatoes in crock pot. Raw-Low 6 hours. Raw- High 4 hours. Frozen- High 6 hours, Low 8 hours Shred chicken with two forks. Heat George Foreman grill or skillet. Use butter to coat the pan to keep tortillas from sticking. Apply before each new set of quesadillas. Put open tortilla down. Using butter knife spread a little cream cheese on bottom. Add some chicken mixture, top with shredded cheese. Fold quesadilla in half, tilt in GF grill so that extra juices can drain if needed then close the lid. Cook until both sides are slightly golden. (Need to flip with spatula in the skillet).
