Found an Indian curry sauce at Aldi and had to try it. Kids loved this meal and had seconds of this meal!

Freezer Meal—Spinach stuffed Chicken

Well the photo doesn’t do it justice. But this is a requested meal from family, specifically my brother in law. It really is best when done as a freezer meal as the stuffing stays in better and the flavors absorb into the chicken. Easy to make when you already have bulk chicken and putting other recipes away. 4 chicken breasts (medium to large size) 2 cups frozen chopped spinach 1-8oz package cream cheese 4 cloves garlic minced 1 cup frozen or fresh shredded mozzarella cheese Salt & Pepper Take a small microwaveable bowl and put cream cheese in it. Microwave 30 seconds to 1 minute to warm it enough to stir. Add spinach, garlic, salt and pepper. Stir until mixed well. Then stir in cheese. Take the chicken breasts and cut a slot length wise on the thicker side. Scoop mixture into pocket, close up by pressing sides together. Put into gallon ziplock bag and freeze. Depending on size, 2 big breasts could make 4 servings. On serving day, put in greased baking dish. Bake at 350 for rough

Freezer Meal-Asian Chicken Stirfry

Bulk Chicken, two breasts, cut into chunks $3.25 Asian seasoning Soy Sauce (2 tablespoons) Olive oil (2 tablespoons) Stir Fry Veggies Frozen with sauce $2.89? Rice or halved spaghetti noodles (cook day of meal) Approximately 6 servings for around $7.25 or $1.25 per serving. Chop bulk chicken. Add to freezer bag with seasoning, oil, soy sauce. Push all air out, label and freeze flat. Day of serving put chicken in crockpot on low for 5-6 hours. Cook stir fry veggies according to package directions (sauté in pan) and then add sauce and chicken. Serve over cooked rice or spaghetti broken in half and cooked.

Ham Mac N Cheese

Easy, simple, fast. A family favorite...should have had leftovers but everyone had seconds. Now I make Mac n cheese different than I think most. This style came from the Lovingier side and its just what I know as real Mac n Cheese. You can make it from a box mix or with velveeta, but I prefer the stringy goodness of real Cheese. Ham Mac N Cheese is just Lovingier style Mac n Cheese with chunked ham added. I used frozen ham that I had from buying bulk ham on the bone. Ingredients: *2 cups elbow macaroni uncooked *3 tablespoons milk *2 tablespoons butter * 1 1/2 cups shredded Colby cheese or Colby Jack *1 cup chopped cooked ham Directions: Since I used frozen chopped ham I put that in a skillet with a sprinkling of water and let it get hot. While that was heating up I boiled water for the macaroni. Once to a boil, add 2 cups macaroni. Boil while stirring occasionally for 7-9 minutes or until tender. Drain macaroni.
