Freezer Meal—Spinach stuffed Chicken



Well the photo doesn’t do it justice. But this is a requested meal from family, specifically my brother in law.

It really is best when done as a freezer meal as the stuffing stays in better and the flavors absorb into the chicken. Easy to make when you already have bulk chicken and putting other recipes away. 

4 chicken breasts (medium to large size)
2 cups frozen chopped spinach
1-8oz package cream cheese
4 cloves garlic minced
1 cup frozen or fresh shredded mozzarella cheese
Salt & Pepper

Take a small microwaveable bowl and put cream cheese in it. Microwave 30 seconds to 1 minute to warm it enough to stir. Add spinach, garlic, salt and pepper. Stir until mixed well. Then stir in cheese.

Take the chicken breasts and cut a slot length wise on the thicker side. Scoop mixture into pocket, close up by pressing sides together. Put into gallon ziplock bag and freeze. Depending on size, 2 big breasts could make 4 servings.

On serving day, put in greased baking dish. Bake at 350 for roughly an hour or until bubbly. Serve with mashed potatoes or roasted potatoes and veggie if desired.
