Honey Mustard Chicken

Today's meal. Mustard Honey glazed chicken thighs with roasted veggies.

Chicken thighs fresh from Aldi 99cents per pound. Put in crockpot. Small bowl and took 1/2 cup brown sugar, 3 tablespoons honey, 5 tablespoons mustard, stirred mixture together and poured on chicken. High on crockpot 3.5 hours. Could do low 6-8 hours or if frozen low 8 hours. 

Chopped golden potatoes (my new favorite as the peels are so thin they don't need to be peeled), baby carrots, one yellow onion. Put on baking sheet. Drizzle with olive oil, seasoning of choice (we used season salt and crumbled dried basil from garden). Broil (500 degree oven) for 25-35 minutes or until tender.

I put whole 3 pound package of chicken in and did four medium size potatoes and we had enough for supper, plus two leftover containers. One for a single lunch and one for me and the kids lunch.

Estimated cost 90 cents a serving.
