Turkey Tortinelli Soup



After making a turkey for Christmas dinner, we cleaned most of the meat off the bones and put the rest in a stock pot to cook down. After several hours on low, we used a strainer and strained off the broth. I put about 8 cups back into the stock pot. I then added a package of dry onion soup mix. Then a package of sliced mushrooms. I brought this up to a boil while I picked meat from the bones and added to the pot. Then I added a package of Tortinelli pasta. Bring all to a  boil for about 5-7 minutes or until pasta is nearly done. Last I added some frozen peas and carrots, heat to boil then serve.

You could do this with chicken or just added shredded chicken or turkey to it. Instead of Tortinelli you could do egg noodles or any pasta really.
