Southwest Soup



Second meal with leftover turkey (but could totally do this with chicken).

Ingredients:
1 can black beans (drained & rinsed)
1 can rotel tomatoes 
1 can whole kernel corn (drained) or I used a cup of frozen 
1 can chicken broth (or make your own with bullion cube and water)
2 cups cooked shredded turkey or chicken
2 cups cooked rice
Southwest seasoning
Red pepper
Salt & Pepper as desired
Shredded cheese & sour cream as garnish

Instructions:
Put beans, tomatoes, corn, broth, turkey/chicken, and seasoning in crockpot. Cool on low 3-4 hours. (Or you can bring to boil in stock pot on stove then simmer for 30 minutes). Cook rice (can use instant). Add rice last 30 minutes in crockpot or last 10 if on stove. Serve with shredded cheese or sour cream if desired.
